Ingredients

  • 1 can of Hereford Corned Beef 340g
  • 4 potatoes
  • 4 eggs
  • 4 slices of bread
  • 1 bag of lamb's lettuce or lettuce
  • Vinaigrette sauce
  • pepper
  • Herbs of Provence
  • Salt

Preparation

  1. Preheat your oven to 200°C (thermostat 6-7).
  2. Peel the potatoes, cut them into pieces and boil them in water for 20 minutes.
  3. Place a sheet of baking paper on the oven rack.
  4. Cut the slices of bread into squares.
  5. Season them with a drizzle of olive oil, salt, pepper and herbs of Provence.
  6. Bake in the oven for 10 minutes until golden brown.
  7. Cook the eggs for 6 minutes in boiling water so that the yolk remains runny.
  8. Cool them under cold water.
  9. Cut the corned beef into small cubes.
  10. Place the lamb's lettuce in a salad bowl and dress with the vinaigrette.
  11. Arrange a bed of seasoned salad on each plate.
  12. Then assemble your salad by arranging the potato pieces, croutons, corned beef cubes and halved eggs.
  13. Season with freshly ground pepper before serving.
